Ingredients

Scale
  • 1 cup (226 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1/2 cup (120 ml) apple cider
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • For the Cinnamon Sugar Coating:
  • 1/4 cup (50 g) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Cream the butter and sugars: In a large mixing bowl, beat the softened unsalted butter, granulated sugar, and packed light brown sugar together on medium speed until light and fluffy, about 5 minutes. Scrape down the sides of the bowl halfway through.
  2. Add the wet ingredients: Beat in the large egg, apple cider, and vanilla extract until just combined. The batter may look slightly curdled—this is normal.
  3. Whisk the dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed just until no streaks of flour remain. Scrape the bottom of the bowl with a spatula to ensure everything is incorporated. The dough will be soft and slightly sticky.
  5. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 24 hours.
  6. Preheat and prep: When ready to bake, preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  7. Make the cinnamon sugar coating: In a small shallow bowl, whisk together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon.
  8. Scoop and roll: Using a cookie scoop (about 1.5 tablespoons), scoop rounded tablespoons of chilled dough. Roll each ball between your palms to smooth, then roll generously in the cinnamon sugar mixture. Place coated dough balls about 2 inches apart on prepared baking sheets.
  9. Bake: Bake one sheet at a time in the center of the oven for 10-12 minutes. Cookies are done when edges are set and lightly golden, but centers still look soft and slightly puffy.
  10. Cool on the pan: Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

Chilling the dough is non-negotiable for thick, chewy cookies. For extra softness, store cookies with a slice of bread in an airtight container. To freeze, place baked cookies in a single layer in a freezer-safe bag for up to 3 months, or freeze unbaked dough balls and bake directly from frozen, adding 2-3 minutes to bake time.
