This Easy No-Bake S’mores Icebox Cake is a perfect summer dessert that requires no oven. Layers of graham crackers, creamy marshmallow filling, and rich chocolate ganache create a cold, creamy, and crunchy treat that tastes just like a campfire memory without the heat.

  • 2 cups heavy whipping cream (cold)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup marshmallow fluff
  • 1 box (14.4 oz) graham crackers (about 3 full sleeves)
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • 1 cup mini marshmallows
  • 1/2 cup chocolate shavings or a chocolate bar for shaving (optional)

Instructions

  1. Make the Chocolate Ganache: Place 2 cups semi-sweet chocolate chips in a medium microwave-safe bowl. Heat 1/2 cup heavy cream in the microwave for about 45 seconds until steaming. Pour hot cream over chocolate chips. Let sit for 2 minutes, then stir until smooth. Set aside to cool slightly.
  2. Whip the Cream Filling: In a large bowl, beat 2 cups cold heavy whipping cream on medium speed until it starts to thicken. Add 1/2 cup powdered sugar and 1 teaspoon vanilla extract. Continue beating until soft peaks form.
  3. Add the Marshmallow Fluff: Gently fold 1/2 cup marshmallow fluff into the whipped cream using a rubber spatula until fully combined and no white streaks remain.
  4. Start Layering: Spread a very thin layer of the cream mixture on the bottom of a 9×13-inch dish. Place a single layer of graham crackers over the cream, breaking to fit as needed.
  5. Build the Cake: Spread about 1/3 of the remaining cream mixture evenly over the graham crackers. Drizzle about 1/3 of the slightly cooled chocolate ganache over the cream. Repeat layers: graham crackers, cream, ganache, ending with a final layer of graham crackers (three layers total).
  6. Top with Ganache and Marshmallows: Pour remaining chocolate ganache over the top layer of graham crackers and spread evenly. Sprinkle 1 cup mini marshmallows over the top. Optionally, use a kitchen torch to lightly brown the marshmallows.
  7. Chill: Cover the dish with plastic wrap and refrigerate for at least 6 hours, preferably overnight, until the graham crackers soften and the cake is set.
  8. Serve: Remove from fridge, top with chocolate shavings if desired. Use a sharp knife to cut clean squares, wiping the knife clean between cuts. Serve cold.

Notes

For best results, chill overnight. If ganache is too thick, microwave in 10-second intervals until pourable. For clean slices, wipe knife between cuts. Can be made ahead and stored in fridge for up to 4-5 days. Freezes well for up to 2 months.
