  • 2 tablespoons ground flaxseed (14g)
  • ⅓ cup mini chocolate chips (60g)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: ¼ cup unsweetened shredded coconut, ¼ cup dried cranberries or raisins, ¼ cup chopped nuts, 2 tablespoons hemp seeds

Instructions

  1. In a large mixing bowl, combine rolled oats, ground flaxseed, and salt. Stir until evenly distributed.
  2. Add peanut butter, honey, and vanilla extract. Stir until a thick, cohesive dough forms (about 1 minute).
  3. Fold in mini chocolate chips and any optional mix-ins gently.
  4. Chill the mixture in the refrigerator for 10-15 minutes (optional but recommended for easier handling).
  5. Scoop about 1 tablespoon of mixture and roll into smooth balls. If too sticky, wet hands slightly; if too dry, add a splash of honey or peanut butter.
  6. Place rolled bites on a parchment-lined baking sheet or plate.
  7. Refrigerate for at least 20-30 minutes to set before serving.
  8. Store in an airtight container in the refrigerator for up to 2 weeks, at room temperature for up to 3 days, or freeze for up to 3 months.

Notes

For best texture, use room-temperature peanut butter and stir well. Wet hands with cold water to prevent sticking while rolling. Let bites rest overnight for deeper flavor.
