  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1/4 cup (30g) old-fashioned rolled oats
  • 1/4 cup (31g) all-purpose flour
  • 1/4 cup (50g) packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons (42g) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel, core, and slice the apples into roughly 1/4-inch thick slices.
  3. In a medium bowl, combine the sliced apples, granulated sugar, 1 tablespoon of flour, cinnamon, nutmeg, and lemon juice. Toss until evenly coated. Let sit while making the topping.
  4. In a small bowl, whisk together the rolled oats, 1/4 cup of flour, brown sugar, cinnamon, and salt.
  5. Add the cold, cubed butter. Using a pastry cutter, fork, or fingertips, work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining.
  6. Transfer the apple mixture to a small baking dish or 6-inch cast iron skillet. Spread into an even layer.
  7. Sprinkle the topping evenly over the apples. Do not press it down.
  8. Place the dish on a baking sheet and bake for 20-25 minutes, or until the topping is golden brown and the apple filling is bubbly around the edges.
  9. Let the crisp cool for at least 5 minutes before serving.

Notes

For best results, use cold butter and slice apples evenly. Let the crisp rest for 5 minutes after baking to allow the filling to set. The topping can be made gluten-free by using a 1:1 gluten-free flour blend.
