Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder (50/50 blend of natural and Dutch-process recommended)
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup (60g) powdered sugar, for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt for about 20 seconds. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes with an electric mixer on medium speed. Scrape down the bowl halfway through.
  4. Add eggs one at a time, beating well after each addition. Add vanilla extract and beat until combined.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate for exactly 45 minutes.
  7. Place powdered sugar in a small bowl. Using a 1.5-tablespoon cookie scoop, portion the dough and roll into balls. Roll each ball generously in powdered sugar until fully coated.
  8. Place coated dough balls on prepared baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes, until puffed and cracked but still soft in the center.
  9. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best crackle, roll dough balls twice in powdered sugar. Chilling dough for exactly 45 minutes is crucial to prevent spreading. For cat-like shape, gently pinch one side of dough ball before rolling in powdered sugar. Cookies taste even better the next day.
