  • 1/2 cup sliced black olives
  • 1/2 cup sour cream
  • 1/2 cup fresh salsa or pico de gallo
  • 1 avocado, diced and tossed with lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Brown the Meat: Heat a large skillet over medium-high heat. Add the ground beef or chorizo and cook, breaking it up with a spoon, until browned and cooked through—about 6-8 minutes. If using ground beef, add a splash of pickled jalapeño brine and a pinch of salt. Drain any excess fat. Transfer to a bowl and keep warm.
  2. Warm the Beans and Corn: In the same skillet (no need to wash it), add the drained black beans and corn. Cook over medium heat for 2-3 minutes, just until warmed through. Transfer to a separate bowl.
  3. Make the Queso: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute—it should smell nutty and look like a pale paste. Slowly pour in the milk, whisking constantly to prevent lumps. Cook for 2-3 minutes until the mixture thickens enough to coat the back of a spoon. Reduce heat to low.
