  • 1/2 cup mayonnaise
  • 1 packet (1 oz) ranch seasoning mix
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 12 oz bacon, cooked until crispy and crumbled (about 1214 strips)
  • 3 green onions, thinly sliced (white and light green parts only for the dip, save some green tops for garnish)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 large round sourdough bread loaf (about 89 inches in diameter, 45 inches tall)
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder (for brushing the bread)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Assorted dippers: tortilla chips, pita chips, pretzel bites, sliced baguette, celery sticks, carrot sticks
  • Extra crumbled bacon for topping
  • Extra sliced green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil, lay out bacon strips in a single layer, and bake for 15-18 minutes until crispy. Let cool on paper towels, then crumble into small pieces. Set aside about 1/4 cup for topping later.
  2. Reduce oven temperature to 350°F (175°C). Using a sharp serrated knife, cut the top off the sourdough loaf about 1 inch from the top. Set the top aside. Carefully hollow out the inside of the bread, leaving about a 1-inch thick wall all around. Tear the removed bread into bite-sized pieces and place on a baking sheet alongside the bread bowl top.
  3. In a small bowl, mix melted butter with 1/2 teaspoon garlic powder. Brush the inside of the bread bowl, the top, and the bread pieces with the garlic butter mixture. Toast everything for 8-10 minutes until lightly golden and crispy.
  4. In a large mixing bowl, combine softened cream cheese, sour cream, mayonnaise, ranch seasoning mix, garlic powder, and black pepper. Beat with a hand mixer on medium speed until smooth and fluffy—about 2 minutes. Scrape down the sides of the bowl halfway through.
  5. Fold in 1 1/2 cups of the shredded cheddar cheese, all of the Monterey Jack cheese, most of the crumbled bacon (save about 1/4 cup for topping), and the sliced green onions. Stir until evenly distributed.
  6. Spoon the dip mixture into the hollowed-out bread bowl, pressing down gently to fill all gaps. Mound slightly on top. Sprinkle remaining 1/2 cup of cheddar cheese over the top, followed by reserved crumbled bacon. Place bread bowl on a parchment-lined baking sheet.
  7. Bake at 350°F (175°C) for 25-30 minutes, until hot and bubbly and cheese on top is melted and lightly golden. If desired, switch to broil for the last 1-2 minutes for extra browning, watching closely.
  8. Remove from oven and let rest for 5 minutes. Sprinkle with remaining green onion tops and fresh parsley if using. Arrange toasted bread pieces and other dippers around the bread bowl on a large platter. Serve immediately.
