  • 1 large onion, sliced

  • 3 stalks celery, chopped
  • 2 cups beef broth (low-sodium preferred)
  • 1/2 cup dry red wine (optional)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 4 cloves garlic, peeled and roasted
  • 1/2 cup whole milk or heavy cream
  • 4 tablespoons unsalted butter, softened
  • Salt and pepper, to taste

Instructions

  1. Pat the chuck roast dry and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the roast for about 4 minutes per side until a deep brown crust forms. Transfer to the crockpot.
  3. In the same skillet, sauté sliced onions, carrots, and celery for 3-4 minutes until softened. Add minced garlic and cook for another minute. Transfer vegetables over the roast in the crockpot.
  4. Deglaze the skillet with red wine (if using), scraping up browned bits. Simmer for 2 minutes, then add tomato paste, thyme, rosemary, and bay leaves. Stir and pour over the roast and vegetables.
  5. Add beef broth to cover ingredients halfway. Cover and cook on low for 6-8 hours or on high for 4-5 hours until roast is fork-tender.
  6. Preheat oven to 400°F. Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes. Once cool, squeeze out soft cloves.
  7. Boil peeled and quartered potatoes in salted water for 15-20 minutes until tender. Drain and return to pot.
  8. Add softened butter, roasted garlic cloves, and warm milk or cream to potatoes. Mash until smooth and creamy. Season with salt and pepper.
  9. Slice or shred the pot roast. Serve with creamy garlic mashed potatoes and ladle some cooking juices over the dish.
