Ingredients

Scale
  • 4 bone-in pork chops, about 1-inch thick (about 2 lbs or 900g total)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon salt (6g)
  • 1/2 teaspoon black pepper (2g)
  • 1/2 teaspoon garlic powder (2g)
  • 1/2 teaspoon onion powder (2g)
  • 1/4 teaspoon smoked paprika (1g)
  • 2 large yellow onions, thinly sliced (about 4 cups or 400g)
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth (240ml)
  • 1 can (10.5 oz or 298g) cream of mushroom soup
  • 1 packet (1 oz or 28g) dry onion soup mix
  • 2 tablespoons cornstarch (16g)
  • 2 tablespoons cold water (30ml)
  • 1 tablespoon Worcestershire sauce (15ml)
  • 1 teaspoon dried thyme (2g)
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish, optional)
  • Fresh thyme sprigs (for garnish, optional)

Instructions

  1. Season the pork chops. Pat the pork chops dry with paper towels. In a small bowl, mix the salt, pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over both sides of the pork chops. Let them sit at room temperature for 15 minutes while you prep the onions.
  2. Sear the pork chops. Heat the olive oil in a large skillet over medium-high heat until it shimmers. Carefully place the pork chops in the hot skillet. Sear for 3-4 minutes per side until golden brown and crusty. Transfer the seared chops to a plate.
  3. Caramelize the onions. In the same skillet, reduce the heat to medium. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for 8-10 minutes until the onions are soft, golden, and starting to brown. Add the minced garlic and cook for 1 more minute until fragrant. Scrape up any browned bits from the bottom of the pan.
  4. Build the gravy base. Pour the chicken broth into the skillet with the onions. Stir in the cream of mushroom soup, dry onion soup mix, Worcestershire sauce, dried thyme, and bay leaf. Whisk everything together until smooth. Let it simmer for 2-3 minutes, stirring occasionally.
  5. Layer in the slow cooker. Pour about half of the onion gravy mixture into the bottom of your slow cooker. Arrange the seared pork chops in a single layer on top. Pour the remaining gravy over the pork chops.
  6. Slow cook. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The pork chops are done when they’re fork-tender and easily pull apart.
  7. Thicken the gravy. About 30 minutes before serving, carefully remove the pork chops to a plate and cover loosely with foil. In a small bowl, whisk together the cornstarch and cold water until smooth. Slowly pour this slurry into the slow cooker with the gravy, whisking constantly. Cover and cook on HIGH for 20-30 minutes until the gravy thickens.
  8. Finish and serve. Remove the bay leaf. Return the pork chops to the slow cooker to rewarm for 5 minutes. Serve the pork chops with plenty of onion gravy ladled over the top. Garnish with fresh parsley or thyme if desired.

Notes

Don’t skip searing the pork chops—it adds incredible depth of flavor. Use bone-in chops for best results. Thicken the gravy at the end with a cornstarch slurry for best consistency. Let pork rest 5-10 minutes before serving. For gluten-free version, use gluten-free cream of mushroom soup and check onion soup mix label.
