  • 1/4 cup honey (85 grams)
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce (60 ml), low sodium preferred
  • 1 tablespoon apple cider vinegar (15 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1/4 cup water or chicken broth (60 ml)
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch (8 grams) mixed with 2 tablespoons water (for thickening sauce)

Instructions

  1. Pat the chicken breasts dry with paper towels and season lightly with ground black pepper.
  2. In a medium mixing bowl, whisk together honey, soy sauce, olive oil, apple cider vinegar, minced garlic, water or chicken broth, and red pepper flakes if using.
  3. Place the chicken breasts in a single layer at the bottom of the crockpot and pour the honey garlic sauce evenly over the top.
  4. Cover and cook on low for 3 to 4 hours until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
  5. Remove the chicken and keep warm tented with foil. Stir the sauce in the crockpot; if too thin, transfer to a saucepan or keep on high heat.
  6. Mix cornstarch with water to make a slurry and whisk slowly into the sauce. Heat and stir until thickened and glossy, about 3–5 minutes.
  7. Pour the thickened sauce over the chicken breasts, garnish if desired, and serve immediately with your choice of sides.

Notes

Use fresh, skinless chicken breasts for best results. Avoid overcooking by checking internal temperature at 3 hours. Thicken sauce last with cornstarch slurry. For a spicy twist, add chili garlic sauce or extra red pepper flakes. Tamari or coconut aminos can replace soy sauce for gluten-free. Add vegetables like baby carrots or bell peppers an hour before cooking ends for a one-pot meal. Leftovers store well refrigerated for 3 days or frozen for up to 3 months.
