Spicy Sriracha Deviled Eggs Recipe with Crispy Wonton Strips

A flavorful twist on classic deviled eggs featuring a creamy, spicy sriracha yolk filling topped with crispy wonton strips for a perfect balance of heat and crunch.

  • 12 large eggs (room temperature preferred)
  • ½ cup mayonnaise
  • 2 tablespoons sriracha sauce (adjust to taste)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon rice vinegar
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • About 8 wonton wrappers, cut into thin strips
  • Vegetable oil for frying wonton strips
  • Chopped scallions or chives for garnish (optional)

Instructions

  1. Place 12 large eggs in a single layer in a large pot and cover with cold water by about an inch (approx. 3 cups/700 ml). Bring water to a rolling boil over medium-high heat, then cover the pot and remove from heat. Let sit for exactly 12 minutes.
  2. Immediately transfer eggs to a bowl of ice water for 5-10 minutes to stop cooking and make peeling easier.
  3. Gently tap each egg on the counter to crack the shell, then peel under running water. Slice each egg in half lengthwise and carefully scoop out yolks into a mixing bowl.
  4. Mash the yolks with a fork or potato masher until smooth. Add ½ cup mayonnaise, 2 tablespoons sriracha, 1 teaspoon Dijon mustard, 1 teaspoon rice vinegar, ½ teaspoon garlic powder, and salt and pepper to taste. Mix thoroughly until creamy and well combined. Adjust seasoning as desired.
  5. Stack wonton wrappers and cut into thin strips about ¼ inch (6 mm) wide.
  6. Heat 1-2 inches of vegetable oil in a deep skillet over medium-high heat until it reaches 350°F (175°C) or a small piece of wonton sizzles immediately. Fry strips in batches for 1-2 minutes, stirring gently until golden and crisp. Remove with a slotted spoon and drain on paper towels.
  7. Spoon or pipe the yolk mixture into each egg white half, mounding slightly.
  8. Sprinkle crispy wonton strips generously over each filled egg. Garnish with chopped scallions or chives if desired.
  9. Chill deviled eggs for at least 15 minutes before serving. Add wonton strips just before serving to keep them crispy.

Notes

Use fresher eggs for easier peeling. Fry wonton strips just before serving to keep them crispy. A thermometer helps maintain oil temperature. For gluten-free, substitute wonton strips with corn tortillas or jicama sticks. Mayonnaise can be replaced with Greek yogurt to reduce fat. Baking wonton strips is a lower-oil alternative but less crispy.
