  • 1 ½ cups (270 g) semi-sweet chocolate chips
  • Flaky sea salt for sprinkling on top
  • Optional: A handful of chopped toasted pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whip the butter and sugars together in your mixing bowl until light and fluffy, about 3-4 minutes.
  3. Add the eggs and vanilla, mixing well after each addition.
  4. Stir in the pumpkin puree until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Fold in the chocolate chips and nuts if using.
  8. Drop rounded tablespoons of dough onto the baking sheets, spacing them about 2 inches apart.
  9. Sprinkle a pinch of flaky sea salt on each cookie before baking.
  10. Bake for 12-14 minutes or until the edges are just set but the centers still look soft.
  11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

If dough is too sticky, chill for 15 minutes before scooping. Watch baking time carefully to avoid cakey cookies. Use room temperature eggs and butter for best texture.
