  • 12 slider buns, soft and slightly sweet (potato rolls recommended)
  • 6 slices provolone cheese, halved to fit sliders
  • 2 tablespoons unsalted butter, softened (for toasting buns)
  • 1 small yellow onion, thinly sliced (optional)
  • 2 cups (16 fl oz) beef broth, low sodium preferred
  • 1/2 cup (4 fl oz) dry red wine or additional beef broth for non-alcoholic version
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 garlic clove, minced
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Prepare the Au Jus Sauce: In a medium saucepan, combine beef broth, red wine (or extra broth), Worcestershire sauce, soy sauce, minced garlic, and thyme. Bring to a gentle simmer over medium heat. Let it reduce slightly, about 10-12 minutes, stirring occasionally. Taste and season with salt and pepper. Keep warm on low heat while you prepare the sliders.
  2. Toast the Slider Buns: Spread softened butter on the insides of each slider bun. Heat a large skillet over medium heat and toast the buns, buttered side down, until golden and crisp. Remove and set aside.
  3. Warm the Roast Beef: In the same skillet, gently warm the sliced roast beef just until heated through. Avoid cooking it too long or it will dry out. If using onions, add them to the pan and sauté until soft and lightly caramelized for about 5 minutes (optional).
  4. Assemble the Sliders: Layer the warm roast beef on the bottom half of each toasted bun. Fold or layer provolone cheese slices on top of the beef. Add the sautéed onions if using. Place the top bun over the cheese.
  5. Final Touch (optional): If you prefer melted cheese, place the assembled sliders under a broiler for 1-2 minutes until cheese bubbles and melts—watch carefully to avoid burning.
  6. Serve: Place the sliders on a platter with small bowls of warm au jus sauce for dipping.

Notes

If au jus is too thin, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into simmering sauce to thicken slightly. Avoid overcooking roast beef to keep it tender. Toast buns with butter to prevent sogginess. Onions are optional but add sweetness and depth of flavor. For melted cheese, broil sliders briefly before serving.
