A creamy, tangy, and spicy buffalo chicken dip balanced perfectly with blue cheese crumbles, ideal for game day or casual gatherings.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 12 oz or 340 g), rotisserie recommended
  • 1/2 cup buffalo wing sauce (120 ml), e.g., Frank’s RedHot
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream (120 ml)
  • 1/4 cup mayonnaise (60 ml)
  • 1/2 cup blue cheese crumbles (75 g), plus extra for garnish
  • 1 cup shredded sharp cheddar cheese (100 g)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp freshly ground black pepper
  • Optional garnish: chopped fresh parsley or green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine cream cheese, sour cream, and mayonnaise. Mix with a spatula until creamy and smooth, about 2-3 minutes.
  3. Add buffalo wing sauce to the creamy mixture and stir well until evenly combined.
  4. Fold in shredded chicken, shredded cheddar cheese, garlic powder, onion powder, and black pepper. Mix until chicken is evenly coated and cheese is distributed, about 2 minutes.
  5. Transfer the mixture to an 8×8-inch baking dish and smooth the top with a spatula.
  6. Sprinkle blue cheese crumbles evenly over the top.
  7. Bake uncovered for 20-25 minutes until edges bubble and top is slightly browned.
  8. Remove from oven and let rest for 5 minutes to thicken.
  9. Garnish with chopped parsley or green onions and serve warm with tortilla chips, celery sticks, or toasted baguette slices.

Notes

Let cream cheese soften at room temperature for at least 30 minutes before mixing to avoid lumps. Rest dip after baking for easier scooping. Adjust buffalo sauce to control heat level. Add a splash of milk or sour cream if dip is too thick after baking. Can be made in a slow cooker on low for 2-3 hours as an alternative method.
