  • 4 tablespoons (57g) unsalted butter
  • 2 tablespoons honey
  • 2 tablespoons fresh thyme leaves, roughly chopped, plus sprigs for garnish
  • Pinch of salt
  • Freshly ground black pepper, to taste

Instructions

  1. Peel 1 pound (450g) of carrots and slice into uniform sticks about 2-3 inches long and 1/4-inch thick.
  2. Place 4 tablespoons (57g) of unsalted butter in a medium skillet over medium heat. Melt slowly, stirring occasionally until butter foams and turns golden brown with a nutty aroma (3-4 minutes).
  3. Immediately add the sliced carrots to the browned butter. Toss to coat and cook for about 5 minutes, stirring occasionally, until carrots start to soften but still have a slight bite.
  4. Pour 2 tablespoons of honey over the carrots, stirring gently to combine. Cook for another 3-4 minutes to allow slight caramelization.
  5. Sprinkle 2 tablespoons of fresh thyme leaves, a pinch of salt, and freshly ground black pepper over the carrots. Stir well and cook for another 1-2 minutes to infuse flavors.
  6. Taste a carrot for tenderness and seasoning; cook an additional 1-2 minutes if softer carrots are desired. Remove from heat.
  7. Transfer carrots to a serving dish and garnish with extra thyme sprigs if desired.

Notes

Watch the butter carefully while browning to avoid burning. Use medium to medium-low heat and stir frequently. For even cooking, cut carrots uniformly. If using dried thyme, use half the amount and add earlier in cooking. Leftovers keep well refrigerated for up to 3 days and reheat gently on the stove to preserve texture.
