Refreshing Boozy Bomb Pop Popsicles

These adult summer treats combine tart berries and alcohol in layered popsicles that offer a refreshing, smooth texture and a subtle buzz perfect for warm evenings.

Ingredients

  • 1 cup unsweetened cranberry juice
  • 1 cup fresh or frozen strawberries, hulled and sliced
  • ½ cup fresh blueberries or raspberries
  • ½ cup vodka (preferably Tito’s Handmade Vodka)
  • ¼ cup triple sec or orange liqueur
  • 2 tablespoons simple syrup or honey (adjust to taste)
  • Juice of 1 lime (freshly squeezed)
  • Optional: fresh mint leaves
  • Optional: edible flowers

Instructions

  1. Prepare the Strawberry Puree (10 minutes): Rinse and hull the strawberries. Place them in the blender with 1 tablespoon of simple syrup and lime juice. Blend until smooth but not watery. Set aside.
  2. Mix the Cranberry Layer (5 minutes): In a bowl, stir together cranberry juice, vodka, triple sec, and 1 tablespoon simple syrup. Taste and adjust sweetness if needed. This layer will be the bottom of your popsicle.
  3. Prepare the Blueberry Layer (optional step, 5 minutes): Lightly mash the blueberries with a fork. Mix with a splash of vodka and a teaspoon of simple syrup.
  4. Assemble the Popsicles (15 minutes): Pour a few tablespoons of the cranberry mixture into the bottom of each mold. Freeze for about 30 minutes until slightly firm but not fully solid.
  5. Add a layer of strawberry puree on top of the cranberry layer. Freeze again for 30 minutes.
  6. Spoon the blueberry mixture on top and insert the wooden sticks. Freeze for at least 4 hours or overnight until fully solid.
  7. To unmold, briefly run warm water on the outside of the molds for a few seconds. Gently pull on the sticks to release the popsicles.

Notes

Do not rush freezing each layer to avoid color blending. Measure alcohol precisely to ensure popsicles freeze properly. Use fresh lime juice for best flavor. For creamier texture, add a splash of coconut milk to the strawberry layer. If popsicles stick, briefly run warm water on molds to release.
