  • 1 bottle (64 ounces) apple cider, chilled
  • 1 bottle (750 ml) Prosecco or dry sparkling wine, chilled
  • Apple brandy, bourbon, or vodka (optional, for a stronger spiked version)
  • Fresh apple slices (Honeycrisp, Fuji, or Granny Smith)
  • Cinnamon sticks
  • Star anise (optional)
  • Fresh rosemary sprigs
  • Pomegranate seeds
  • 2 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon
  • Lemon or orange wedges (for rimming glasses)

Instructions

  1. Prep your garnishes first. Slice one or two apples into thin rounds (about ¼-inch thick). If not serving immediately, toss with a little lemon juice to prevent browning. Rinse rosemary sprigs and pomegranate seeds if using. Set everything out in small bowls.
  2. Make the cinnamon-sugar mixture. On a small plate, combine 2 tablespoons of granulated sugar with 1 tablespoon of ground cinnamon. Stir with a fork until evenly mixed.
  3. Rim your glasses (optional but highly recommended). Run a lemon or orange wedge around the rim of each glass. Gently dip the wet rim into the cinnamon-sugar mixture, twisting slightly to coat evenly. Tap off any excess. Set glasses upright and let them dry for a minute.
  4. Set up your bar. Arrange the glasses, the bottle of chilled apple cider, the bottle of chilled Prosecco, and your bottle of bourbon or brandy (if using). Place the bowls of garnishes nearby.
  5. Fill each glass about halfway with apple cider. If adding bourbon or brandy, pour about 1 ounce (2 tablespoons) into the glass first, then top with cider.
  6. Top off with Prosecco. Fill the rest of the glass with sparkling wine, leaving about an inch of space at the top for garnishes.
  7. Add garnishes. Drop in an apple slice, a cinnamon stick, a few pomegranate seeds, or a rosemary sprig. Let each person choose their own combination.
  8. Serve immediately. Stir gently with the cinnamon stick before sipping to incorporate the flavors.

Notes

Chill all ingredients thoroughly before serving. Use a dry Prosecco to balance the sweetness of the cider. Pre-slice apples right before serving to prevent browning. For a non-alcoholic version, swap Prosecco for sparkling apple cider or ginger ale.
