Quick Pomegranate Molasses Chicken Thighs – Easy 30-Min Meal

A quick and easy weeknight dinner featuring sticky, sweet-tart pomegranate molasses glazed chicken thighs, ready in under 30 minutes with minimal effort.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680g)
  • 1/3 cup (80ml) pomegranate molasses
  • 2 tablespoons (30ml) soy sauce
  • 1 tablespoon (15ml) honey or maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon red pepper flakes
  • Fresh parsley or cilantro, chopped (for garnish)
  • 1 tablespoon pomegranate arils (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Pat the chicken dry with paper towels. Season both sides with salt and pepper.
  2. In a small bowl, whisk together pomegranate molasses, soy sauce, honey, minced garlic, and optional red pepper flakes.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Place chicken skin-side down in the hot pan. Cook undisturbed for 5-6 minutes until deep golden brown.
  5. Flip the chicken and cook the other side for 3-4 minutes.
  6. Pour the glaze over the chicken. Cook for 2-3 minutes, then flip and cook another 2-3 minutes, spooning glaze over the chicken until thickened and syrupy.
  7. Check internal temperature with a meat thermometer; it should read 165°F (74°C).
  8. Transfer chicken to a plate and let rest for 5 minutes.
  9. Spoon remaining glaze over chicken, garnish with parsley, pomegranate arils, and sesame seeds if desired. Serve immediately.

Notes

Pat chicken very dry for crispy skin. Don’t rush the sear; let it cook undisturbed for 5-6 minutes. Watch the glaze as it can burn quickly due to sugar content. Let chicken rest for 5 minutes before serving. For a gluten-free version, use tamari instead of soy sauce.
