These quick and easy mashed potatoes are made with browned butter and garlic for a nutty, savory flavor that’s perfect for weeknights or holiday gatherings. Ready in just 20 minutes with no peeling required.

Ingredients

Scale
  • 2 lbs (about 900g) Yukon Gold potatoes
  • ½ cup (1 stick / 113g) unsalted butter
  • 4–5 cloves garlic, smashed
  • ½ cup (120ml) whole milk
  • 1–1.5 tsp (6-9g) kosher salt
  • ½ tsp (1g) freshly ground black pepper
  • 2 tbsp fresh parsley, chopped (optional garnish)

Instructions

  1. Scrub the Yukon Gold potatoes well (no need to peel). Cut them into roughly 1.5-inch (4 cm) chunks, keeping them uniform in size.
  2. Place a large pot over medium heat. Add the butter and let it melt completely. Swirl the pan occasionally as the butter foams and then subsides. Once you see brown specks forming and the butter smells nutty and toasty (about 5-6 minutes), immediately add the smashed garlic cloves. Stir for about 30 seconds until fragrant. Pour the browned butter and garlic into a small heat-safe bowl and set aside. Do not wipe out the pot.
  3. Return the same pot to the stove. Add the potato chunks and cover with cold water by about 1 inch (2.5 cm). Add a generous pinch of salt (about 1 tablespoon). Bring to a boil over high heat, then reduce to a simmer. Cook until fork-tender, about 12-15 minutes.
  4. Drain the potatoes in a colander. Return the empty pot to the stove over low heat for about 30 seconds to dry it out. Add the potatoes back to the dry pot.
  5. Mash the potatoes with a potato masher or ricer. Pour the reserved browned butter and garlic over the top. Add the milk, salt, and pepper. Mash and stir until creamy. Taste and adjust seasoning. Add a splash more milk if needed.
  6. Transfer to a serving bowl, garnish with fresh parsley if desired, and serve immediately.

Notes

For extra garlic flavor, mince one clove and add it raw with the browned butter. Warm the milk before adding to prevent the potatoes from seizing. Don’t over-mash or the potatoes will become gluey. If making ahead, store in the fridge for up to 2 days and reheat gently with a splash of warm milk.
