A creamy, protein-packed overnight oats recipe that’s quick to prepare and perfect for busy mornings. Made with simple ingredients like oats, peanut butter, and protein powder, it’s a kid-approved breakfast that keeps everyone full until lunch.

Ingredients

Scale
  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk (whole, 2%, or oat milk)
  • 1/4 cup (60g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1–2 tablespoons (15-30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a jar or container, combine the milk, peanut butter, honey (or maple syrup), and vanilla extract. Stir until the peanut butter is mostly incorporated.
  2. Add the rolled oats, protein powder, chia seeds (if using), and salt. Stir until well combined, about 30 seconds, scraping the sides and bottom.
  3. Taste and adjust sweetness or peanut butter flavor as desired.
  4. Seal the container and refrigerate for at least 6 hours, preferably overnight.
  5. The next morning, stir the oats. If too thick, add a tablespoon or two of milk. Serve cold or microwave for 30-45 seconds if desired. Top with extra peanut butter, sliced banana, or chocolate chips.

Notes

Use old-fashioned rolled oats, not quick oats. Mix peanut butter with milk first for easier incorporation. Don’t skip the salt. Let oats sit for at least 6 hours. Make a big batch on Sunday for the week. For a vegan version, use plant-based milk and protein powder, and maple syrup instead of honey. For nut-free, use sunflower seed butter.
