These spooky deviled eggs feature a creamy, smoky filling topped with creepy olive spiders. Perfect for Halloween parties, they’re quick to make and always a crowd-pleaser.

Ingredients

Scale
  • 12 large eggs, hard-boiled and peeled
  • 1/3 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar or pickle juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika, plus more for garnish
  • 1 can (6 ounces) large black olives, drained
  • 1/4 cup cream cheese, softened (optional)

Instructions

  1. Hard-boil the eggs: Place eggs in a single layer in a large pot. Cover with cold water by about an inch. Bring to a rolling boil over high heat, then remove from heat, cover, and let sit for 12 minutes. Transfer to an ice bath and let cool completely—about 10 minutes.
  2. Peel and halve the eggs: Gently tap each egg on the counter to crack the shell, then roll it between your palms to loosen. Peel under running cold water. Slice each egg lengthwise. Gently pop out the yolks into a medium bowl. Arrange the whites on a serving platter.
  3. Make the filling: Add mayonnaise, mustard, vinegar (or pickle juice), salt, pepper, and smoked paprika to the yolks. Mash with a fork until smooth. For extra creaminess, add the softened cream cheese and mix until fully incorporated. Taste and adjust seasoning.
  4. Pipe the filling: Spoon the yolk mixture into a piping bag fitted with a star tip. Pipe a generous swirl into each egg white cavity. Don’t overfill.
  5. Prepare the olive spiders: Drain the olives and pat them dry. For each spider, use one whole olive (the body) and one olive sliced crosswise into thin rings (the legs). Cut a small slit on one side of the whole olive. Slice an olive into 4-5 thin rings, then cut each ring in half. Insert 4 leg pieces on each side of the slit.
  6. Assemble the spiders: Place one olive spider on top of each deviled egg. Position the legs so they look like they’re crawling.
  7. Garnish and serve: Sprinkle a light dusting of smoked paprika over the eggs. For extra creepiness, add a tiny dot of mustard or sriracha on the olive spiders for ‘eyes.’ Serve immediately or refrigerate until ready.

Notes

Boil eggs the night before and store in fridge for easier assembly. Use older eggs (at least a week old) for easier peeling. For vegan version, use vegan mayo and dairy-free cream cheese. The filling can be made ahead and stored separately. Add olive spiders just before serving for best appearance.
