  • 4 ounces cream cheese, softened
  • ⅓ cup hot sauce (e.g., Frank’s RedHot)
  • ½ cup shredded cheddar cheese
  • ¼ cup blue cheese crumbles (optional)
  • 1 tablespoon ranch seasoning mix
  • Salt and black pepper to taste
  • ⅓ cup baking soda
  • 6 cups water (for boiling)
  • 1 large egg, beaten
  • Coarse sea salt for sprinkling
  • 2 tablespoons melted butter (for brushing after baking)

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour. Stir until combined, then gradually add remaining flour, ½ cup at a time, until a shaggy dough forms.
  3. Turn dough onto a floured surface and knead for 6-8 minutes until smooth and elastic. Place in a lightly greased bowl, cover, and let rise for 1 hour until doubled.
  4. While dough rises, make filling: Beat softened cream cheese until smooth. Stir in hot sauce and ranch seasoning. Fold in shredded chicken, cheddar, and blue cheese (if using). Adjust seasoning to taste. Cover and refrigerate.
  5. Punch down risen dough and divide into 4 equal pieces. Roll each into a 12-inch log, then cut each log into 8 pieces (32 total).
  6. Flatten each piece into a 3-inch circle. Place 1 tablespoon of filling in the center. Gather edges and pinch firmly to seal. Roll into a smooth ball. Place seam-side down on a parchment-lined baking sheet, covered with a towel.
