Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line your 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides for easy lifting. Set it aside.
  2. Brown the butter. Place the 1/2 cup of unsalted butter in a small saucepan over medium heat. Let it melt completely, then continue cooking, swirling the pan occasionally. The butter will start to foam and crackle. After about 5-7 minutes, you’ll see brown specks forming at the bottom of the pan, and it will smell incredibly nutty and toasty.   3. Mix the dry ingredients. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Make sure everything is evenly distributed. Set aside.
  4. Combine the wet ingredients. In a medium bowl, whisk together the granulated sugar, brown sugar, eggs, milk, vanilla extract, and pumpkin puree until smooth. Slowly drizzle in the cooled brown butter while whisking continuously. The mixture should look glossy and well combined.
  5. Combine wet and dry. Pour the wet ingredients into the bowl with the dry ingredients. Use a rubber spatula to fold everything together gently. Mix just until you no longer see streaks of flour—overmixing will make the bread tough. A few lumps are totally fine.
  6. Make the streusel topping. In a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon. Add the cold butter cubes and use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter pieces remaining. This creates those gorgeous crumbly clusters.
  7. Assemble the loaf. Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle the streusel topping generously over the top, gently pressing it into the batter so it sticks during baking.
  8. Bake. Place the pan in the preheated oven and bake for 55-65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the streusel is browning too quickly after about 40 minutes, tent the loaf loosely with aluminum foil.
  9. Cool. Let the bread cool in the pan for about 15 minutes. Then lift it out using the parchment overhang and transfer it to a wire rack to cool completely. I know it’s tempting, but slicing it while it’s still warm will make it fall apart. Patience pays off here.
