  • 34 Honeycrisp apples
  • 4 ounces sharp white cheddar
  • 4 ounces brie
  • 2 ounces blue cheese (optional)
  • 3 ounces prosciutto, thinly sliced
  • 3 ounces genoa salami or soppressata
  • 1/4 cup honey
  • 1/4 cup fig jam or preserves
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup dried cranberries or cherries
  • Fresh rosemary or thyme sprigs for garnish
  • 1 small crusty baguette, sliced, or 810 ounces crackers
  • Flaky sea salt

Instructions

  1. Rinse the Honeycrisp apples under cool water and dry thoroughly. Cut each apple in half through the stem, then cut each half into thin slices about 1/4 inch thick. Place slices in a bowl of cold water with a squeeze of lemon juice to prevent browning. Pat dry before arranging.
  2. Cut the sharp cheddar into thin slices or small cubes. Leave the brie whole or cut into wedges. Crumble the blue cheese if using. Let cheeses sit at room temperature for about 10 minutes before serving.
  3. In a small dry skillet over medium heat, toast the walnuts or pecans for 2-3 minutes until fragrant and lightly golden. Transfer to a small bowl and let cool.
  4. Place a large wooden board on a flat surface. Position small bowls of honey, fig jam, and toasted nuts at the corners or edges of the board.
  5. Place the cheddar slices in one area, brie in another, and blue cheese crumbles in a small pile nearby.
  6. Fold prosciutto slices into loose ribbons or rosettes and place near the brie. Arrange salami slices in a small overlapping pile or fan them out.
  7. Pat apple slices dry and arrange them in a fan or overlapping row in the center or along one side of the board. Drizzle a tiny bit of honey over a few slices.
  8. Add dried cranberries or cherries in small clusters around the board. Tuck fresh rosemary or thyme sprigs here and there. Arrange baguette slices or crackers in a basket or on the board, filling empty spaces.
  9. Sprinkle a tiny pinch of flaky sea salt over the apple slices.

Notes

For best results, let cheeses come to room temperature before serving. Toast nuts just before assembling for maximum crunch. Slice apples right before serving to prevent browning. The board can be prepped a day ahead except for the apples.
