  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ⅓ cup unsalted butter (75g), melted
  • ½ cup brown sugar (100g)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips (130g), semi-sweet or dark

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. Mash the bananas in a large mixing bowl using a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Add melted butter to the bananas and stir until combined.
  4. Mix in the brown sugar, egg, and vanilla extract until everything is well incorporated.
  5. Whisk together the flour, baking soda, salt, and cinnamon in a separate small bowl or sift directly over the wet ingredients.
  6. Fold the dry ingredients into the wet mixture gently using a spatula—do not overmix.
  7. Fold in the chocolate chips evenly throughout the batter, saving a few to sprinkle on top.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the reserved chocolate chips on top if desired.
  9. Bake for 55-65 minutes, checking at 55 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  10. Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

If bread browns too fast, tent with foil after 40 minutes. Use room temperature eggs and melted butter for smooth batter. For dairy-free, substitute butter with coconut oil or plant-based margarine. Bananas can be microwaved for 30 seconds to speed ripening. Avoid overmixing to keep bread moist and tender. Let bread cool completely before slicing to avoid gummy texture.
