Ingredients

Scale
  • 2 pounds carrots, peeled and trimmed
  • 3 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon garlic powder
  • ¼ teaspoon cinnamon (optional)
  • ⅓ cup well-stirred tahini
  • ¼ cup fresh lemon juice
  • 3 tablespoons warm water
  • 1 tablespoon pure maple syrup
  • 1 small clove garlic, minced or grated
  • ¼ teaspoon kosher salt
  • 2 tablespoons toasted sesame seeds (optional, for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. Peel the carrots and trim off the tops and tips. Cut them on the diagonal into pieces about 2-3 inches long and ½ inch thick at the thickest part. If carrots are very thick, halve lengthwise for even cooking.
  3. In a medium mixing bowl, whisk together olive oil, 3 tablespoons maple syrup, 1 teaspoon salt, pepper, garlic powder, and cinnamon (if using). Add carrot pieces and toss well until every piece is coated.
  4. Spread the carrots in a single layer on the prepared baking sheet. Do not overcrowd.
  5. Roast for 20 minutes. Remove from oven and flip each carrot piece with tongs.
  6. Roast for another 10-15 minutes, until carrots are tender throughout and edges are deeply caramelized (total roasting time: 30-35 minutes).
  7. While carrots roast, make the tahini sauce: In a small bowl, whisk together tahini, lemon juice, warm water, 1 tablespoon maple syrup, garlic, and ¼ teaspoon salt until smooth and creamy. Add more warm water if too thick.
  8. Transfer hot roasted carrots to a serving platter. Drizzle generously with tahini sauce. Sprinkle with toasted sesame seeds, fresh parsley, and flaky sea salt. Serve immediately.

Notes

For best results, cut carrots into uniform pieces for even cooking. Flip halfway through roasting for even caramelization. Use warm water for tahini sauce to prevent seizing. Store leftovers separately: carrots in an airtight container in the fridge for up to 4 days, tahini sauce in a sealed jar for up to 5 days. Reheat carrots in a 350°F oven for 5-7 minutes. The carrots taste even better the next day.
