Lighter Sourdough Herb Stuffing - featured image

A lighter, healthier version of classic stuffing made with sourdough bread, fresh herbs, and crispy sage. This 30-minute recipe delivers all the flavor and texture of traditional stuffing without the heavy butter bath.

Ingredients

Scale
  • 8 cups sourdough bread, cut into 1-inch cubes (day-old or slightly stale)
  • 3 tablespoons olive oil (plus 1 tablespoon for crispy sage)
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced (about 1.5 cups)
  • 3 celery ribs, diced (about 1 cup)
  • 4 garlic cloves, minced
  • 1/2 cup fresh sage leaves, loosely packed (some chopped, some whole for garnish)
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1.5 cups low-sodium vegetable or chicken broth
  • 1 large egg, lightly beaten
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup dried cranberries (optional)
  • 12–15 fresh sage leaves (for crispy garnish)
  • 1 tablespoon olive oil (for crispy sage)

Instructions

  1. Preheat oven to 375°F (190°C). Spread sourdough cubes on a large baking sheet in a single layer. Toast for 10-12 minutes, tossing halfway through, until golden and dry but not hard. Set aside to cool.
  2. While bread toasts, dice onion and celery into small, even pieces (about 1/4 inch). Mince garlic. Chop herbs, keeping about 15 whole sage leaves separate for crispy garnish.
  3. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium heat. Once butter stops foaming, add diced onion and celery. Cook for 6-7 minutes, stirring occasionally, until onion is translucent and celery has softened.
  4. Add minced garlic and 2 tablespoons chopped sage. Cook for 1 minute more, just until fragrant. Do not let garlic brown.
  5. Transfer vegetable mixture to a large mixing bowl. Add toasted sourdough cubes, remaining fresh thyme and rosemary, dried cranberries (if using), salt, and pepper. Toss gently to combine.
  6. In a small bowl or measuring cup, whisk together broth and beaten egg. Pour over bread mixture slowly, folding with a spatula until bread is moist but not swimming. Adjust with more bread cubes or broth as needed.
  7. Transfer mixture to a greased 9×13-inch baking dish. Spread evenly without pressing down. Dot surface with remaining 1 tablespoon butter, cut into small pieces.
  8. Bake uncovered at 375°F for 20-25 minutes, until top is golden and crispy. Edges should be slightly darker and crunchy.
  9. While stuffing bakes, make crispy sage: Heat 1 tablespoon olive oil in a small skillet over medium heat. Add reserved whole sage leaves in a single layer. Cook for 30-45 seconds per side until bright green and translucent. Drain on paper towel.
  10. Remove stuffing from oven and let rest for 5 minutes. Top with crispy sage leaves just before serving.

Notes

Dry bread is essential—use day-old sourdough or toast fresh cubes at 300°F for 15 minutes. Don’t overmix to avoid mush. Adjust salt based on broth sodium. For make-ahead, assemble without baking, refrigerate up to 24 hours, then add 10 minutes to baking time. Leftovers keep 4 days in fridge. Freezes well for up to 3 months.
