This Light & Easy Crockpot Chicken Meal Prep Bowls recipe is the result of an accidental Tuesday success. It’s become my weekly anchor—the one dish I can always count on to be delicious, filling, and completely stress-free.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (about 900g)
  • 1 tbsp olive oil (15 ml)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth (240 ml)
  • 1/4 cup salsa verde or your favorite salsa (60 ml)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 2 cups cooked quinoa or brown rice (about 350g cooked)
  • 1 can black beans (15 oz / 425g), drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned, drained)
  • 1 bell pepper, diced (any color)
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. Sear the chicken (optional but recommended): Heat the olive oil in a large skillet over medium-high heat. Pat the chicken breasts dry with paper towels and season them with a pinch of salt and pepper. Sear for 2-3 minutes per side, until golden brown.
  2. Build the base in the slow cooker: Place the diced onion and minced garlic in the bottom of the crockpot. Lay the seared (or raw) chicken breasts on top. In a small bowl, whisk together the chicken broth, salsa verde, cumin, smoked paprika, chili powder, salt, and pepper. Pour this mixture over the chicken.
  3. Cook low and slow: Cover the slow cooker and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with two forks.
  4. Shred the chicken: Carefully remove the chicken breasts to a cutting board. Use two forks to shred the meat into bite-sized pieces. Return the shredded chicken to the slow cooker and stir it into the cooking liquid. Let it sit for 5-10 minutes to soak up all that goodness.
  5. Assemble the bowls: While the chicken is resting, prepare your base. Divide the cooked quinoa or rice evenly among 4-6 meal prep containers. Top each with an equal portion of the shredded chicken, black beans, corn, and diced bell pepper.
  6. Finish and garnish: Sprinkle each bowl with fresh cilantro and add a lime wedge on the side.

Notes

Let the assembled bowls cool completely on the counter before putting the lids on and refrigerating to prevent condensation. Don’t skip the lime—it brightens all the flavors. For best texture, shred the chicken while it’s still warm.
