A classic green bean casserole gets a nutty upgrade with browned butter. This easy, kid-approved side dish is creamy, crunchy, and perfect for holidays or weeknight dinners.

Ingredients

Scale
  • 1.5 pounds (680 grams) fresh or frozen green beans, trimmed and cut into 2-inch pieces
  • 4 tablespoons (56 grams) unsalted butter
  • 1 can (10.5 ounces / 298 grams) cream of mushroom soup
  • 1/2 cup (120 milliliters) milk
  • 1.5 cups (about 85 grams) French fried onions, divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the butter: Place 4 tablespoons unsalted butter in a large skillet over medium heat. Melt completely, then continue cooking, swirling occasionally, until the butter foams, the foam subsides, and small brown specks form at the bottom (about 3-4 minutes). Remove from heat immediately and pour into a small bowl to stop cooking.
  3. Blanch the green beans (if using fresh): Bring a large pot of salted water to a boil. Add green beans and cook for 2 minutes. Drain and transfer to a bowl of ice water to stop cooking. If using frozen green beans, thaw and pat dry.
  4. Combine the sauce: In a mixing bowl, whisk together cream of mushroom soup, milk, garlic powder, salt, and pepper. Stir in 1/2 cup of the French fried onions.
  5. Mix everything together: Add the green beans to the skillet (or a large bowl) and pour the browned butter over them. Toss to coat. Pour the soup mixture over the green beans and stir until well combined.
  6. Transfer to the baking dish: Pour the green bean mixture into a greased 9×13-inch baking dish. Spread evenly.
  7. Add the topping: Sprinkle the remaining 1 cup of French fried onions evenly over the top. Do not press them down.
  8. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until bubbly around the edges and the topping is golden brown. If the topping gets too dark, tent with foil for the last 5 minutes.
  9. Rest and serve: Let the casserole sit for about 5 minutes before serving.

Notes

Watch the butter closely when browning; it can go from perfect to burnt in seconds. For make-ahead, assemble the casserole up to 24 hours in advance, cover with foil, and refrigerate. Add about 10 minutes to the baking time if starting from cold. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
