High-Protein Chipotle Chicken Caesar Wrap

A smoky, spicy, and creamy chicken Caesar wrap packed with protein and fresh crunch, perfect for quick lunches or dinners.

  • 2 large boneless, skinless chicken breasts (about 1 lb / 450 g), trimmed
  • 1 tbsp chipotle chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/3 cup mayonnaise
  • 2 tbsp freshly grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • 1 tsp chipotle hot sauce or adobo sauce
  • Salt and pepper to taste
  • 4 large whole wheat flour tortillas (approx. 10-inch diameter)
  • 4 cups chopped Romaine lettuce
  • 1/2 cup shredded Parmesan cheese
  • Optional: sliced ripe avocado
  • Freshly ground black pepper for finishing

Instructions

  1. Pat the chicken breasts dry with paper towels. Mix chipotle chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Rub the spice blend evenly over both sides of the chicken breasts.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 6-7 minutes per side until cooked through and internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing thinly against the grain.
  3. While chicken rests, whisk together mayonnaise, Parmesan, lemon juice, Dijon mustard, minced garlic, chipotle hot sauce, salt, and pepper in a bowl. Adjust seasoning to taste.
  4. Chop Romaine lettuce into bite-sized pieces and shred Parmesan cheese. Slice avocado if using. Warm tortillas slightly in a dry skillet or microwave for 15 seconds.
  5. Lay a warm tortilla flat. Spread about 2 tbsp of chipotle Caesar dressing down the center. Layer with Romaine lettuce, sliced chipotle chicken, shredded Parmesan, and avocado slices if using. Drizzle a little more dressing and add freshly ground black pepper.
  6. Fold in the sides of the tortilla and roll tightly from bottom to top to keep filling snug. Slice in half diagonally if desired.
  7. Serve immediately or wrap tightly in foil or parchment for on-the-go meals.

Notes

Let the chicken rest after cooking to keep it juicy. Warm tortillas before assembling to prevent cracking. Slice chicken against the grain for tenderness. Dressing tastes better if made ahead and chilled. For gluten-free option, use almond flour tortillas. For dairy-free, substitute mayo and omit Parmesan or use nutritional yeast.
