This healthy Greek yogurt pumpkin bread is moist, tender, and sweetened with maple syrup and pumpkin. Packed with protein and fiber, it’s the perfect cozy fall loaf without refined sugar.

  • 1 cup pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 2 large eggs, room temperature
  • 1/3 cup maple syrup (pure maple syrup)
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour (or all-purpose flour)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • Optional: ⅓ cup dark chocolate chips or chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper, leaving some overhang on the sides.
  2. In a large mixing bowl, combine the wet ingredients: pumpkin puree, Greek yogurt, eggs, maple syrup, and vanilla extract. Whisk until smooth and fully combined.
  3. In a separate medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently with a rubber spatula. Do not overmix. Stir just until the flour disappears. If adding chocolate chips or nuts, fold them in at this stage.
  5. Pour the batter into the prepared loaf pan and spread it evenly with the spatula. Tap the pan gently on the counter to release any air bubbles.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly, tent it loosely with foil for the last 10-15 minutes.
  7. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment sling and transfer to a wire rack. Cool completely before slicing.

Don’t overmix the batter to avoid a dense loaf. Use room temperature ingredients for best texture. Let the bread cool completely before slicing to prevent crumbling. This bread freezes well for up to 3 months.
