  • 1 teaspoon honey (optional)
  • Freshly cracked black pepper, to taste
  • Pinch of sea salt (optional)
  • 20 wooden skewers (soaked in water for 10 minutes if grilling or serving outdoors)

Instructions

  1. Rinse and pat dry the watermelon. Cut off the rind and slice the flesh into 1-inch cubes, keeping them uniform for skewering (about 10 minutes).
  2. Crumble the feta into bite-sized pieces that hold shape but melt slightly on the tongue. Set aside (about 3 minutes).
  3. Rinse fresh mint leaves and gently pat dry. Pick smaller leaves for milder flavor and easier skewering (about 2 minutes).
  4. In a mixing bowl, whisk together extra virgin olive oil, fresh lime juice, honey (if using), and freshly cracked black pepper to taste. Set aside.
  5. Thread one watermelon cube, one feta crumble, and one mint leaf on each skewer, repeating the pattern once more so each skewer has 2 watermelon cubes, 2 feta pieces, and 2 mint leaves. Handle gently to avoid breaking the feta (about 10 minutes).
  6. Arrange skewers on a serving platter and lightly brush or drizzle the dressing over the top. Add a fresh crack of black pepper and a tiny pinch of sea salt if desired. Serve immediately for best texture.

Lightly grill watermelon cubes for about 1 minute per side before assembling for a smoky flavor. Avoid over-dressing to prevent soggy watermelon.
