These Fresh Mini Caprese Skewers Bites are light, fresh, and satisfying appetizers featuring cherry tomatoes, mini mozzarella balls, and basil with a balsamic glaze drizzle. Perfect for quick, no-fuss gatherings and parties.

Ingredients

  • Cherry tomatoes, firm and ripe
  • Mini mozzarella balls (bocconcini or ciliegine)
  • Fresh basil leaves
  • Extra virgin olive oil
  • Balsamic glaze or reduction
  • Salt
  • Freshly ground black pepper
  • Short wooden skewers or toothpicks

Instructions

  1. Rinse cherry tomatoes and fresh basil thoroughly. Pat dry with paper towels to remove excess moisture. Drain mini mozzarella balls and gently pat dry.
  2. Take a wooden skewer or toothpick and thread one cherry tomato, followed by a fresh basil leaf (folded if large), then one mozzarella ball. Repeat until all ingredients are used.
  3. Place assembled skewers on a serving platter. Lightly sprinkle with salt and freshly ground black pepper. Drizzle extra virgin olive oil evenly over the top, then finish with a generous swirl of balsamic glaze.
  4. Serve immediately at room temperature or slightly chilled. If making ahead, cover with plastic wrap and refrigerate for up to 2 hours.

Notes

Patting the tomatoes and mozzarella dry is key to preventing sogginess. Add olive oil and balsamic glaze just before serving to keep skewers fresh. Basil leaves should be added whole and just before assembly to preserve aroma. For a smoky flavor, lightly grill tomatoes before assembling. Variations include swapping mozzarella for vegan cheese or tofu for dairy-free options.
