  • 1 fresh baguette, sliced into 1/2-inch rounds
  • 8 ounces fresh mozzarella, sliced or torn into bite-sized pieces
  • 1 pint cherry or grape tomatoes, halved or quartered
  • A handful fresh basil leaves, torn or finely chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • 1 garlic clove (optional), halved for rubbing on crostini

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the baguette into 1/2-inch (1.25 cm) rounds, aiming for uniform thickness.
  3. Arrange the slices in a single layer on a baking sheet. Optionally brush each slice lightly with olive oil.
  4. Toast in the oven for 8-10 minutes until edges turn golden and crisp, flipping halfway through.
  5. If using garlic, remove crostini and rub each slice with the cut side of the garlic clove while still warm.
  6. Halve or quarter the cherry tomatoes and tear or slice mozzarella into bite-sized pieces.
  7. Toss tomatoes and basil in a bowl with a drizzle of olive oil, a pinch of salt, and freshly cracked pepper.
  8. Assemble the bites by layering a piece of mozzarella and a spoonful of the tomato and basil mixture on each crostini.
  9. Finish with a light drizzle of balsamic glaze over each bite.
  10. Serve immediately to enjoy the contrast of crisp crostini and fresh toppings.
