  • 1/3 cup creamy peanut butter (natural, no added sugar)
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice (freshly squeezed)
  • 1/2 teaspoon sriracha or chili flakes (optional)
  • Water to thin (2–3 tablespoons)

Instructions

  1. Dice the chicken breasts into small, bite-sized pieces (about 1/2 inch cubes). Peel and dice the mango, chop the red bell pepper, red onion, and cilantro. Mince the garlic and grate the ginger. Separate and wash the butter lettuce leaves, then pat dry.
  2. In a mixing bowl, combine peanut butter, soy sauce, honey, lime juice, and sriracha or chili flakes if using. Whisk while gradually adding water, 1 tablespoon at a time, until smooth and pourable but thick enough to cling to wraps. Adjust seasoning to taste.
  3. Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt, pepper, and smoked paprika. Cook, stirring occasionally, until chicken is no longer pink and starts to brown (6–8 minutes). Add garlic, ginger, red bell pepper, and red onion; cook another 5 minutes until vegetables soften but remain slightly crunchy.
  4. Remove skillet from heat and gently fold in diced mango and chopped cilantro to warm slightly without mushiness.
  5. Lay butter lettuce leaves on a serving platter. Spoon chicken and mango mixture into each leaf. Drizzle or dip with creamy peanut sauce and sprinkle chopped roasted peanuts on top.
  6. Serve immediately for best texture and freshness.

If peanut sauce thickens after sitting, stir in a splash of water or lime juice to loosen. Use ripe Ataulfo mango for best sweetness and texture.
