A quick, easy, and healthy snack featuring ripe bananas wrapped in rice paper with creamy almond butter and a drizzle of fresh honey. Perfect for busy afternoons or a light treat.

  • 2 ripe bananas (firm but sweet)
  • 1/2 cup creamy almond butter
  • 2 tablespoons fresh raw honey
  • 4 sheets rice paper wrappers
  • 1 teaspoon lemon juice (optional)
  • 2 tablespoons chopped almonds (optional)
  • A pinch of cinnamon (optional)

Instructions

  1. Prepare your workstation by setting out all ingredients and equipment. Fill a large shallow dish with warm water for dipping rice paper wrappers.
  2. Peel bananas and slice each into 1/2-inch thick pieces. If desired, lightly brush slices with lemon juice to prevent browning.
  3. Dip one rice paper wrapper into warm water for about 10-15 seconds until soft but still slightly firm. Lay flat on the cutting board.
  4. Spread about 2 tablespoons of almond butter evenly over the rice paper, leaving a small border around the edges.
  5. Place banana slices in a single row along one edge of the rice paper. Sprinkle cinnamon or chopped almonds over the banana if using.
  6. Carefully roll the rice paper over the banana slices, tucking in the edges to form a tight roll.
  7. With a sharp serrated knife, cut each roll into 6-8 bite-sized pieces to resemble sushi.
  8. Lightly drizzle fresh honey over the top just before serving.

Notes

Do not over-soak rice paper wrappers to avoid tearing. Use ripe but firm bananas for best texture. Warm honey slightly if too thick for easier drizzling. Prepare rolls ahead but add honey drizzle just before serving to prevent sogginess. Rice paper can be substituted with large lettuce leaves or thin apple slices for different textures.
