Fluffy Overnight Yeast Belgian Waffles Recipe with Easy Strawberry Compote

Light, airy Belgian waffles made with an overnight yeast batter, served with a fresh and simple strawberry compote. Perfect for a special breakfast with minimal morning effort.

  • 2 cups (240g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons instant dry yeast
  • 1/2 teaspoon salt
  • 1 3/4 cups (420 ml) whole milk, warmed (or almond milk for dairy-free)
  • 2 large eggs, room temperature
  • 6 tablespoons (85g) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 2 cups (about 300g) fresh strawberries, hulled and halved
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons water
  • Optional: pinch of ground cinnamon or vanilla bean paste

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, instant dry yeast, and salt.
  2. Warm the milk until just warm to the touch (about 100°F/38°C). Slowly pour the warm milk into the dry ingredients while whisking until smooth. If using active dry yeast, dissolve it in warm milk first and wait for foam.
  3. In a separate bowl, lightly beat the eggs. Stir in melted butter and vanilla extract.
  4. Gently fold the egg mixture into the flour and milk batter until just combined. The batter will be slightly loose.
  5. Cover the bowl tightly with plastic wrap or a clean kitchen towel and refrigerate overnight or for at least 8-12 hours.
  6. About 15 minutes before cooking, prepare the strawberry compote by combining strawberries, sugar, lemon juice, and water in a saucepan. Cook over medium heat, stirring occasionally, until thickened, about 10 minutes. Remove from heat and let cool slightly.
  7. Preheat the Belgian waffle maker according to manufacturer’s instructions and lightly grease if needed.
  8. Stir the batter gently to redistribute yeast bubbles. Pour about 1/2 cup (120 ml) of batter onto the waffle iron, spread slightly, and cook for 4-6 minutes until golden brown and crisp.
  9. Serve waffles hot topped with strawberry compote. Optionally dust with powdered sugar or add whipped cream.

Notes

If batter is too thick in the morning, whisk in a splash of milk to loosen. For crispier waffles, cook a minute or two longer but watch carefully to avoid burning. Use active dry yeast by proofing in warm milk first. Gluten-free and vegan adaptations are possible with ingredient swaps. Clean waffle maker immediately after use to prevent sticking.
