  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 finely chopped jalapeño (optional)
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned and cooked through (6-8 minutes). Drain excess fat if needed.
  3. Stir in chopped onion and garlic; cook until softened (about 3 minutes). Add chili powder, cumin, salt, and pepper; cook for another minute. Set aside.
  4. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
  5. Gradually whisk in milk, stirring constantly to avoid lumps. Cook 3-4 minutes until slightly thickened.
  6. Lower heat to medium-low; stir in shredded cheese, garlic powder, onion powder, and finely chopped jalapeño if using. Stir until cheese melts and sauce is smooth. Add salt to taste.
  7. On a large baking sheet or oven-safe platter, spread a layer of tortilla chips. Spoon half the beef evenly over chips. Drizzle with one-third of the queso blanco sauce. Add jalapeños, diced tomatoes, and green onions.
  8. Repeat layering with remaining chips, beef, and queso blanco. Top with additional jalapeños, tomatoes, green onions, cilantro, and a squeeze of lime juice.
  9. Bake for 8-10 minutes until cheese is bubbly and chips are golden at edges.
  10. Serve immediately with optional sides like sour cream, guacamole, or salsa.
