  • 1 cup fresh strawberries, hulled and halved
  • 4 ounces brie cheese, sliced
  • 4 slices bread (sourdough or country white recommended)
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon honey (optional)
  • A few sprigs fresh thyme (optional)
  • Pinch of freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rinse, hull, and halve about 1 cup of fresh strawberries. Toss with honey (if using) and freshly cracked black pepper.
  3. Spread strawberries in a single layer on the baking sheet. Roast for 12-15 minutes until soft, juicy, and slightly caramelized.
  4. While strawberries roast, slice 4 pieces of bread and butter one side of each slice generously.
  5. On the unbuttered side of two bread slices, layer slices of brie (about 2 ounces per sandwich). Add warm roasted strawberries evenly on top. Scatter thyme leaves if using.
  6. Close sandwiches with remaining bread slices, buttered side facing out.
  7. Heat a skillet over medium heat. Cook sandwiches for 3-4 minutes per side, pressing gently with a spatula, until bread is golden brown and brie is melted. Lower heat if bread browns too fast.
  8. Slice sandwiches diagonally and serve warm immediately.

Notes

Use softened butter for easy spreading. Cook on medium or medium-low heat to melt cheese without burning bread. Roasting strawberries is key to avoid sogginess and deepen flavor. Cover skillet with lid if cheese is slow to melt.
