Flavorful Grilled Pineapple BBQ Chicken Skewers

Sweet, smoky, and juicy grilled chicken skewers paired with caramelized pineapple and a tangy homemade BBQ sauce, perfect for summer BBQs and quick dinners.

  • 2 large boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 fresh pineapple, cored and cut into 1-inch chunks (or drained canned pineapple chunks)
  • ½ cup BBQ sauce (smoky, slightly sweet)
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)

Instructions

  1. Cut chicken breasts into 1-inch cubes and pineapple into similar-sized chunks.
  2. In a medium bowl, whisk together BBQ sauce, honey, smoked paprika, garlic powder, onion powder, olive oil, salt, and pepper.
  3. Toss chicken cubes in the marinade and let marinate for at least 15 minutes, up to 2 hours.
  4. Soak wooden skewers in water for 30 minutes if using.
  5. Alternate threading chicken pieces and pineapple chunks onto each skewer (4-5 chicken pieces and 3-4 pineapple chunks per skewer).
  6. Preheat grill to medium-high heat (375–400°F). Oil the grill grates lightly.
  7. Grill skewers for 10-12 minutes, turning every 2-3 minutes until chicken reaches 165°F and pineapple is caramelized.
  8. Let skewers rest a few minutes before serving. Serve warm with extra BBQ sauce if desired.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning. Use a meat thermometer to ensure chicken reaches 165°F. Turn skewers every 2-3 minutes to avoid flare-ups and burn. Fresh pineapple caramelizes best but canned or frozen (drained) can be used. Marinate chicken at least 15 minutes for flavor, but no longer than 4 hours to avoid meat breakdown. Can bake skewers at 425°F for 15-20 minutes if no grill is available.
