  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons finely chopped fresh cilantro
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: smoked paprika or cayenne pepper for smoky heat
  • Optional: vegan spread for dairy-free version

Instructions

  1. In a small bowl, combine softened butter, lime juice, lime zest, chopped cilantro, garlic powder, kosher salt, and black pepper. Mix until creamy and uniform. Set aside.
  2. Husk the corn, removing all silk threads. Rinse under cold water and pat dry.
  3. Preheat grill to medium-high heat (around 400°F / 200°C). If using charcoal, wait until coals are covered with white ash.
  4. Place corn directly on grill grates. Cook for 10-12 minutes, turning every 2-3 minutes to ensure even char and prevent burning.
  5. Remove corn from grill and immediately brush generously with cilantro lime butter. The heat will melt the butter into the kernels.
  6. Serve hot, optionally with extra lime wedges for squeezing.

Notes

Soaking corn with husks on for 15 minutes before grilling can help prevent burning and add moisture. Rotate corn frequently on the grill for even cooking and char. Apply butter immediately after grilling for best flavor. For dairy-free option, substitute butter with vegan spread or coconut oil.
