  • Sprinkles or colored sugar (nonpareils, star shapes, edible glitter)
  • About 12 wooden popsicle sticks or lollipop sticks
  • Optional: 1 teaspoon vanilla extract
  • Optional: edible glitter or gold dust
  • Optional: gluten-free rice cereal (for gluten-free version)
  • Optional substitutions: dairy-free margarine or coconut oil instead of butter
  • Optional add-ins: mini chocolate chips, chopped nuts (almonds, pecans)

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat. Have popsicle sticks and sprinkles ready.
  2. Melt 3 tablespoons unsalted butter in a large saucepan over low heat for 2-3 minutes without browning.
  3. Add 10 oz mini marshmallows or chopped marshmallows and stir continuously until melted and smooth (4-5 minutes). Remove from heat.
  4. Add 1 teaspoon vanilla extract if using. Divide marshmallow mixture into separate bowls for each color.
  5. Stir gel food coloring into each bowl until vibrant colors form (e.g., red, blue, yellow).
  6. Quickly fold about 2 cups (50 g) Rice Krispies cereal into each colored marshmallow mixture, coating without crushing.
  7. Press a handful of each colored mixture firmly around the end of a popsicle stick on the lined baking sheet, layering colors for a striped firework effect (about 2-3 inches per stick).
  8. Sprinkle colored sugars or edible glitter over the treats while still warm and sticky.
  9. Let treats cool and firm at room temperature for 30-45 minutes or chill in the fridge for 10 minutes to set faster.
  10. Serve and enjoy. Store extras in an airtight container to keep crisp.

Melt marshmallows over low heat to prevent scorching. Use gel food coloring for vibrant colors without thinning the mixture. Press treats firmly but gently around sticks to avoid crushing cereal.
