A quick and easy recipe for turkey and cheese pinwheel roll-ups perfect for lunches, featuring a creamy spread and fresh greens wrapped in soft tortillas.

Ingredients

  • Large flour tortillas (10-inch)
  • Thinly sliced deli turkey breast (8 oz / 225 g)
  • Cheddar cheese slices or shredded cheddar (4 oz / 115 g)
  • Fresh spinach or baby arugula (1 cup / 30 g)
  • Cream cheese, softened (4 oz / 115 g)
  • Mayonnaise (1 tablespoon)
  • Garlic powder (1/4 teaspoon)
  • Black pepper (freshly ground, to taste)
  • Optional: Dijon mustard (1 teaspoon)

Instructions

  1. Prepare the spread: In a small bowl, mix together the softened cream cheese, mayonnaise, garlic powder, and a pinch of black pepper. Stir in Dijon mustard if using. (~5 minutes)
  2. Lay out the tortilla flat on a clean surface, fully thawed if refrigerated. (~1 minute)
  3. Spread the cream cheese mixture evenly over the entire surface of the tortilla. (~2 minutes)
  4. Layer the deli turkey evenly over the spread, avoiding thick overlapping. (~2 minutes)
  5. Add the sliced or shredded cheddar evenly over the turkey layer. (~1 minute)
  6. Scatter fresh spinach or baby arugula over the cheese layer. (~1 minute)
  7. Roll the tortilla tightly but gently from one edge to form a compact log. (~1 minute)
  8. Wrap the roll tightly in plastic wrap and refrigerate for at least 30 minutes to firm up (optional but recommended). (~30 minutes)
  9. Using a sharp knife, cut the roll into 1-inch thick slices to make 8-10 pinwheels. (~3 minutes)

Notes

Use room temperature cream cheese for smooth spreading. Chill roll-ups before slicing for cleaner cuts. Warm tortillas slightly if they resist rolling. Use a serrated knife for easier slicing. Variations include vegetarian options and different cheeses. Store leftovers wrapped in the fridge up to 2 days. Avoid microwaving to prevent sogginess.
