  • 1/2 cup (120ml) chicken broth
  • 1 teaspoon freshly grated ginger (optional but recommended)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)

Instructions

  1. Prepare the sauce: In a medium bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes if using.
  2. Arrange the chicken thighs: Pat chicken thighs dry with paper towels and place them in a single layer in the crockpot, skin side up if skin-on.
  3. Pour the sauce and broth: Pour the honey garlic sauce evenly over the chicken, then add chicken broth around the edges.
  4. Cook low and slow: Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. Thicken the sauce: About 20 minutes before serving, mix cornstarch with water until smooth. Remove chicken from crockpot and set aside. Stir slurry into sauce and cook uncovered on high for 10-15 minutes until thickened.
  6. Coat the chicken: Return chicken thighs to crockpot and spoon thickened sauce over them. Let sit a few minutes before serving.

Notes

Do not lift the lid during cooking to retain moisture and tenderness. For a crispy finish, broil the chicken thighs for 2-3 minutes after slow cooking. Use low-sodium soy sauce to control saltiness.
