These crispy smoky roasted pumpkin seeds are the appetizer that steals the show without any stress. With a double-boost of smoky flavor from smoked paprika and liquid smoke, they turn a simple ingredient into something memorable.

Ingredients

Scale
  • 1 ½ cups raw pumpkin seeds (pepitas)
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon smoked paprika (preferably Sweet Smoked Spanish Paprika)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)
  • ¼ teaspoon liquid smoke
  • 1 teaspoon fine sea salt (plus more for finishing)
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon brown sugar (optional)
  • ½ teaspoon cumin (optional)
  • Zest of ½ lime (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone mat.
  2. If using fresh pumpkin seeds, rinse them in a colander under cool water, removing most of the pulp. Pat very dry with a clean kitchen towel or paper towels. Let sit for 5 minutes. If using store-bought raw seeds, skip rinsing and just pat dry.
  3. In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne (if using), and black pepper. Stir with a fork.
  4. In a large mixing bowl, add the dried seeds. Drizzle with olive oil and toss until every seed is coated. Sprinkle the spice mixture over the seeds and toss again. Add liquid smoke and toss one more time.
  5. Spread the seasoned seeds in a single, even layer on the prepared baking sheet. Do not overcrowd.
  6. Bake for 20 minutes, stirring halfway through (after 10 minutes) and rotating the pan front to back.
  7. Check for doneness at 20 minutes. Seeds should be golden brown and crunchy. If not, return to oven and check every 2 minutes.
  8. Immediately after removing from the oven, sprinkle with fine sea salt while still hot. Add lime zest or brown sugar if using.
  9. Cool completely on a cooling rack or plate for at least 15 minutes before serving.

Notes

Dry seeds thoroughly to avoid chewy texture. Don’t skip the liquid smoke for best smoky flavor. Watch the last 5 minutes of baking to prevent burning. Seeds continue to crisp as they cool. Store in an airtight container at room temperature for up to 2 weeks. To re-crisp, bake at 300°F for 3-4 minutes and cool completely.
