A warm, smooth, and genuinely satisfying slow cooker soup made with butternut squash and apples. It’s quick to prep, uses simple ingredients, and is perfect for busy weeknights.

Ingredients

Scale
  • 1 medium butternut squash (about 3 pounds), peeled, seeded, and cubed
  • 2 medium apples, peeled, cored, and chopped
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup coconut milk or heavy cream
  • Salt and black pepper to taste
  • Optional toppings: roasted pumpkin seeds, a drizzle of cream, fresh thyme, or crumbled bacon

Instructions

  1. Prep the squash: Cut off both ends, slice in half where the narrow neck meets the bulb, peel, scoop out seeds, and cut into 1-inch cubes.
  2. Prep the apples and onion: Peel and core apples, chop into 1-inch pieces. Dice onion. Mince garlic.
  3. Combine everything in the slow cooker: Add squash, apples, onion, garlic, ginger, cinnamon, nutmeg, 1 teaspoon salt, and broth. Stir.
  4. Cook low and slow: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until squash is fork-tender.
  5. Blend until smooth: Use an immersion blender directly in the pot, or let cool slightly and blend in batches in a regular blender.
  6. Add cream and adjust seasoning: Stir in coconut milk or heavy cream. Taste and adjust salt and pepper.
  7. Serve and garnish: Ladle into bowls and add desired toppings. Serve hot.

Notes

Don’t rush the blending step for a velvety texture. If soup is too thick, add extra broth or water. Soup tastes even better the next day. For a deeper flavor, sauté onion and garlic before adding to slow cooker.
