  • 4 salmon fillets (about 6 ounces each)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 large lemon (zest and juice)
  • 1 bunch asparagus (about 1 pound), trimmed
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt, plus more for vegetables
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven.
  2. Line your sheet pan with parchment paper.
  3. Prepare the vegetables: Trim the woody ends off the asparagus. Halve the cherry tomatoes. Place the asparagus and tomatoes on the prepared sheet pan. Drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt and pepper, and toss gently to coat. Spread them in a single layer, leaving room in the center for the salmon.
  4. Roast the vegetables for 5 minutes.
  5. Make the lemon garlic butter: In a small microwave-safe bowl, melt 4 tablespoons of unsalted butter. Add the minced garlic, zest of one lemon, 2 tablespoons of fresh lemon juice, ½ teaspoon of salt, ¼ teaspoon of black pepper, and the red pepper flakes if using. Whisk together.
  6. Prepare the salmon: Pat the salmon fillets dry with paper towels. Place the fillets skin-side down (if using skin-on) in the center of the pan, nestled among the partially roasted vegetables. Season the tops with the remaining ½ teaspoon of salt and a few grinds of pepper.
  7. Brush the salmon with the lemon garlic butter. Pour any remaining butter over the vegetables.
  8. Roast for 12-15 minutes, until the salmon flakes easily with a fork and the internal temperature reaches 145°F (63°C).
  9. Let it rest for 2 minutes.
  10. Garnish with chopped fresh parsley and serve.
