Easy Sheet Pan Garlic Lemon Salmon with Asparagus & Tomatoes

A quick and healthy sheet pan dinner featuring garlicky, lemony salmon paired with roasted asparagus and sweet cherry tomatoes. Ready in under 30 minutes, this recipe is perfect for busy weeknights.

  • 4 salmon fillets, skin-on, about 6 ounces each
  • 1 bunch asparagus (about 1 pound), trimmed
  • 1 cup cherry tomatoes (about 150 grams), whole
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano (optional)
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Trim the tough ends off the asparagus. In a mixing bowl, combine asparagus and cherry tomatoes. Add minced garlic, 2 tablespoons olive oil, lemon zest, dried oregano, salt, and pepper. Toss until evenly coated.
  3. Spread the asparagus and tomatoes evenly on one side of the baking sheet, avoiding overcrowding.
  4. Pat salmon fillets dry with a paper towel. Drizzle with remaining 1 tablespoon olive oil, then season with salt, pepper, and red pepper flakes if using. Squeeze half a lemon’s juice over each fillet.
  5. Place salmon fillets skin-side down on the other side of the baking sheet, leaving space between each piece.
  6. Roast in the oven for 12-15 minutes, until salmon is opaque and flakes easily with a fork, and asparagus is tender but still crisp.
  7. If vegetables need more time, roast for an additional 2-3 minutes, watching carefully to avoid drying out the salmon.
  8. Remove from oven. Optionally squeeze remaining half lemon over everything and garnish with fresh herbs before serving.

Notes

Pat salmon dry before seasoning to avoid steaming and achieve better texture. Space ingredients evenly on the pan to prevent steaming and ensure crispness. If asparagus stalks are thick, slice them lengthwise for even cooking. Use fresh garlic and lemon zest for best flavor. Leftovers keep well for up to 2 days refrigerated and reheat gently to avoid drying out.
