These easy Rice Krispie broomstick treats for Halloween are the kind of recipe that looks like you spent way more time on them than you actually did. They come together in about thirty minutes, and the best part? The kids can help.

  • 3 tablespoons unsalted butter (plus a little extra for greasing)
  • 1 package (10 ounces) mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening
  • 3035 pretzel sticks
  • Orange frosting (store-bought or homemade)
  • Optional: Small pretzel twists or squares

Instructions

  1. Line your 9×13 inch baking pan with parchment paper, leaving some overhang on the sides. Lightly grease the parchment paper with a little butter or nonstick spray. Set aside. Also, lightly grease your hands with butter or cooking spray.
  2. In a large pot over medium-low heat, melt the 3 tablespoons of butter. Once it is fully melted, add the entire bag of mini marshmallows. Stir constantly with your rubber spatula until the marshmallows are completely melted and smooth, about 4-5 minutes.
  3. Remove the pot from the heat. Pour in the 6 cups of Rice Krispies cereal all at once. Stir gently but thoroughly until all the cereal is coated with the marshmallow mixture.
  4. Transfer the mixture to your prepared pan. Using your greased hands or a greased spatula, press it into an even layer. Let the mixture cool completely at room temperature, about 20-30 minutes.
  5. Once the treats are completely cool, lift them out of the pan using the parchment paper overhang. Place them on a cutting board. Using a sharp knife or pizza cutter, cut them into rectangles about 2 inches wide and 3 inches long. You should get about 30-35 pieces.
  6. Take each rectangle and gently insert a pretzel stick into one of the short ends, pushing it about halfway through the treat. Set each piece aside on a parchment-lined baking sheet.
  7. In a small microwave-safe bowl, combine the 1/2 cup chocolate chips and 1 teaspoon coconut oil. Microwave in 20-second intervals, stirring after each, until the chocolate is smooth and fully melted, about 60-90 seconds total.
  8. Hold each broomstick by the pretzel handle and dip the top (the end opposite the pretzel) into the melted chocolate. Dip about 1/2 inch deep. Let any excess chocolate drip back into the bowl. Place the dipped treat back on the parchment-lined baking sheet. If you are using a small pretzel twist or square, place it on top of the chocolate while it is still wet.
  9. Once all the broomsticks are dipped and the chocolate is still slightly wet (but not running), pipe small lines of orange frosting across the chocolate-dipped area. These lines should be close together, running parallel to the pretzel stick.
  10. Allow the chocolate and frosting to set completely, about 15-20 minutes at room temperature. If you are in a hurry, you can pop them in the refrigerator for 10 minutes, but let them sit at room temperature for 5 minutes first so the chocolate doesn’t crack. Once set, they are ready to serve.

Notes

Keep your hands greased when handling the Rice Krispie mixture. Don’t overheat the marshmallows. Let the treats cool completely before cutting. Use a sharp knife or pizza cutter for clean edges. Test your pretzel sticks first. Work in batches when dipping. If the chocolate thickens while you work, pop it back in the microwave for 10 seconds.
