A light, refreshing, and spooky Halloween mocktail made with real berries, creamy coconut milk, and fizzy soda. This quick and easy drink comes together in under 10 minutes and is perfect for all ages.

Ingredients

Scale
  • 1 cup frozen mixed berries (blueberries, blackberries, and raspberries work best)
  • 1/4 cup water
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 1/2 cup full-fat coconut milk (from a can, shaken well)
  • 1/2 teaspoon vanilla extract
  • 2 cups chilled lemon-lime soda (like Sprite or 7UP) or club soda for a less sweet option
  • Ice cubes (optional: shaped like eyeballs or skulls)
  • Fresh mint sprigs or edible glitter for garnish (optional)
  • A few whole frozen berries to float in each glass (optional)

Instructions

  1. Make the Berry Syrup: Add the frozen mixed berries, water, honey (or maple syrup), and lemon juice to your blender. Blend on high until completely smooth, about 30-45 seconds.
  2. Strain (Optional but Worth It): Place a fine-mesh strainer over a small bowl or directly over your pitcher. Pour the berry puree through the strainer, using the back of a spoon to press all the liquid through. Discard the seeds and pulp.
  3. Prepare the Coconut Cream Swirl: In a small bowl or liquid measuring cup, whisk together the full-fat coconut milk and vanilla extract until smooth and combined.
  4. Assemble the Glasses: Fill your serving glasses with ice cubes. Pour about 1/4 cup of the berry syrup into each glass.
  5. Add the Fizz: Slowly pour the chilled lemon-lime soda over the back of a spoon into each glass, filling it almost to the top.
  6. Create the Swirl: Gently pour about 2 tablespoons of the coconut milk mixture into the center of each glass. Do not stir!
  7. Garnish and Serve: Drop a few whole frozen berries into each glass. Add a sprig of fresh mint or a pinch of edible glitter if desired. Serve immediately.

Notes

For the best swirl effect, pour the coconut milk slowly into the center of the glass and do not stir. Chill all ingredients and glasses beforehand for best results. The berry syrup can be made up to 3 days in advance and stored in the refrigerator.
